Breakfast: Breakfast Burrito
I've been trying to wake up early enough to make breakfast for myself so that I don't give in my desire to stop at QT every for morning for a huge Dr. Pepper and brownie. I'll be the first to admit that the majority of my breakfasts have actually been that. Now I'm going to try to be better.
Breakfast Burrito
1 egg
1/4 cup chopped red pepper
1/4 cup onions
1 whole wheat tortilla
topped with Costco's amazing salsa-yummy
Lunch: Soft taco with lettuce
I didn't bring anything to work and that's what the kids at work had for lunch today so I ate with them!
Dinner: Tortilla Soup
Ingredients
15 ounces can kidney beans, drained and rinsed
1 cup prepared salsa
1 cup frozen corn kernels
1/2 cup white rice, ucooked
3 cups water
1 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon ground cumin
2 cups baked tortilla chips
Preparation
Add all ingredients except tortilla chips to large Dutch oven or saucepan(4-6 quart) and bring to a boil.
Cover, reduce heat to simmering and allow to cook for 12-15 minutes or until rice is done.
Serve in bowls with 1/2 cup of tortilla chips floating on top of each one. A teaspoon of nonfat plain yogurt is optional for garnish.

Random, I know
Ok, so I decided that for the next month I'm going to try to keep track of what we like to eat and we do for exercise. I feel like I never know what to do for meals and I've totally been gaining weight since I went back to work so I need to just pay more attention. I'm also going to include the recipes and whether they were good or not just for further reference for myself! Here we go!
